RSS size is the approximate answer although large amounts of the pages
are shared which makes it trickier. If you are using apache then this is
particularly true although you can till save a ton more for simpler
applications by switching to thttpd or boa.

vmstat 5 will give you a good idea of how Linux itself sees its paging
rates to disk and what is queued to run but won't tell you what is
actually going on behind the scenes in the hypedvisor
