z/VM is an extremely stable product.  We use it to run around 40 or so
Linux guests.
A Linux system in an LPAR can and does have problems that a Linux guest
running
under z/VM will not have.  z/VM handles it in such a way that the Linux
guest does
not see it.

Any time I have to apply any maintenance or patches to these three
LPARs, I boot
them under z/VM to apply the fixes, shut them down and IPL them from the
HMC.

Earlier this year, I took one of our LPAR systems down, and booted it in
z/VM.  I
applied some fixes to it.  Then booted it in an LPAR.  The system got
down to
a certain point in the boot sequence and went into a loop.  (The problem
had to
do with Linux not being able to sense a PAV properly.)  I ended up
having to
do a cio_ignore to effectively disable PAV for that device.

However, when we are involved in an Early Support Program and it is
early enough
in the early support program where IBM has not even announced the level
of code
we are running, then z/VM is not so stable.
