If you are running SuSE, they make it really super super easy. Edit /etc/sysconfig/postfix, put something in the POSTFIX_RELAYHOST like "somemailhost.mycompany.com" Run /sbin/SuSEconfig to whap it over to the postfix/main.cf rcpostfix start
