If you are not familiar with Linux and good with zVM then look at the SUSE SLES 10 SP2 Starter system it is self-contained and self-configurable when you move it between networks. Also it is fairly easy to add an LVM and mount newer versions of SLES or RedHat ISO images for building new Linux images.
I prefer SUSE over RedHat but that is a Religious discussion better left alone.
