Actually, I am  familiar w/Linux... although, I have not been able to touch it 
for quite a few years
now ... as w/you, I too prefer SuSe... I initially started off w/Debian, went 
to RH and then stuck w/
SuSe... Problems that I've had (from a development standpoint) is that I am a 
hardcore assembler
programmer ... but everybody wants C or something else. 

I have worked on VM before but that was about two decades ago. 

Over the years ... I've tried different flavors ... but, I still prefer SuSe 
... and it is what I run on my 
'beast' (I7 w/32g RAM and 21TB DASD).

If you are not familiar with Linux and good with zVM then look at the SUSE SLES 
10 SP2 Starter system it is self-contained and self-configurable when you move 
it between networks. Also it is fairly easy to add an LVM and mount newer 
versions of SLES or RedHat ISO images for building new Linux images. 

I prefer SUSE over RedHat but that is a Religious discussion better left alone.

Could anybody tell / direct and or advise me, on what that most used flavor of 
**nix is on z ??.

I used to be a proponent of SuSe but that was decades ago ....

Furthermore, if anybody can point me to any 'material' that might explain why 
one 'flavor' is chosen over the other, that would be great too.
