Try http://www.linuxdoc.org, they have the Mail-Administrators-HOWTO as
well as mini HOWTOs for Sendmail http://www.sendmail.org and Qmail
http://www.qmail.org, http://www.flounder.net/qmail/qmail-howto.html.
Exim is also a good mail transport http://www.exim.org. Pick whichever
one suits your fancy, they are all high quality and functional.
For the users to access your mail I suggest imapd servers. If you don't
want to dick around with client software there are many web based IMAP
clients, just check the appindex at http://www.freshmeat.net. There is
a howto on Qmail+Courier IMAP here

None of this software cares what kind of network you have, it will work
flawlessly with any platform.
