I'd suggest starting with sfront
(http://www.cs.berkeley.edu/~lazzaro/sa/) or maybe even Csound
(http://www.csound.org/).
* On stage, I must be able to turn the computer on and have the
software power up without any further interaction
You could do this by various means: init scripts (Linux),
autoexec.bat (DOS), start-up folder (Windows), bootable CD, etc.
* Everything has to be fully documented.
This is one of my pet peeves with the Linux audio scene. I've
resolved to improve this situation. I have/will contribute documentation
to the handful of programs that I can get to run on my system. As
packaging improves and programs stabilize, I'll contribute more.
