Ahhh.  That's where the problem was.
There was another invocation of chat in the options file.  
I think it was there from the time I first signed on to my
isp.  Removing that solved the problem.
(Still don't know how pppd managed to get by OK with it
in there though.)

Presumably, if I have them properly specified in my
diald.conf, I don't actually need options in that ppp/options
file?
(I've remove it completely and diald is still fine).
