The actual distro includes a rather small amount of packages in the standard repositories. These are the packages that are "officially supported". The reason Ubuntu has a huge number of packages is because of the "Universe" repository, which is actually taken verbatim from Debian Sid.

Regarding "Universe" packages, however, do check out http://archive.ubuntu.com/ubuntu/pool/universe/r/rsyncrypto/rsyncrypto_0.17-2.dsc. The "Maintainer" field for an Ubuntu package is clearly marked as "Shachar Shemesh". What happens if your server depends on it? Who is going to provide you with help in case something goes wrong with it?

Canonical will not. Universe is not supported, and they cannot possibly support it. I, on the other hand, will only really care about the package if the problem also happens in Debian, which is may or it may not. The same goes for security updates and "Universe".

So, if you can install your Ubuntu server without using "Universe", you're good (or you may be, have not checked how good they live up to their own promises regarding support). If not, I wouldn't touch it with a green laser pointer.
