It depends on the way you install your server - redhat's 'server install' will
dump a whole lot of junk onto your disk - ditto with the 'everything' intall in
custom.

Like I told you, set up MX records to point to your linux box (give it a static
IP of course).  Run the pop server there as well.

Do you have more than one static IP?  Set up a subdomain for your domain ..
