A probable partitioning would include a
/boot = 25MB
/ = 250 MB
/usr = 1GB
/usr/local = 1 GB
/home = 1 GB.But since you will use this as a mailserver, you might
need separate and big partitons like /var/mail and /var/news...
And if you use a machine as a server, a smaller /usr and /usr/local
would suffice as a server needs much less space. You could look into
a guide available at http://linuxdoc.org in the guides section,
Securing and Optimising guide, which has a detailed document as to
setting up a server, for RH based systems(though more or less
applicable for all systems).
