root@localhost is boring? Tried userdel -r root?
Don't ever work as root. Add a normal login id for yourself and work
from there. ANything you have to do as root should be done by su'ing
or using sudo. Most destops have a menu option to go to root as well
(in KDE, it is in K->System->Terminal (Super User mode)).

Oh yes, the email address is configurable in most modern MUAs. SMTP
servers will not react differently to this.

By garbage text, if you mean the headers, then it usually is hidden by
default in all MUAs I have seen. Check out your settings - and RTFM of
