Because postfix is not a pop3 server

Postfix will RECEIVE mails and store them on its server.  It will also act as
an smtp server for allowed IP ranges / authenticated users.

For pop3 you need something like courier imap, cyrus imap, uw-imapd, qpopper,
etc etc etc.  Take your pick.

Mails get dumped to /var/spool/mail/username or whatever - from which users
read the mail using imap, or set their outlook to pull down mail using pop3.

Note - outlook 2k in CWS mode (corporate, workgroup server) supports pop3 and
exchange folders.  In IMO (Internet Mail Only) mode it supports pop3 and imap
- but no exchange server plugins.

Another thing you will miss is the groupware functionality if you use it -
stuff like a global address book (try openldap for that - but outlook's ldap
support doesn't quite agree with openldap even if you configure it per the
tips at one of the sourceforge projects <- search for outlook and ldap there)

That is, it doesnt give people the look and feel of M$'s public address book.

So last time I migrated users from exchange to linux (mandrake 7.2, exim
3.33) I purchased something called "Dencom Global Address Book" -> note that
now you will have to use only pop3 as Dencom is an 'outlook plugin', a
feature available only in CWS mode <- which doesn't support imap).

You can basically 

1. Install a pop3 server (the imap servers above all have pop3 components)

2. configure the mail program (outhouse excuse, outhouse etc) to poll the
server for new mail every 5 minutes (or whatever short interval)
