That is a feature of the ESMTP protocol.

Encourage the use of strong cryptography and PGP signatures if you are afraid
your mail can be forged.

Then, looking through your logs and reading the mail's full headers are often
enough to trace idiots who think they become anonymous by just changing the
from header.
