You can support several hundred, easily. Apache and squirrelmail will
chew far more bandwidth than exim does.
A good light distro (slak or freebsd) should help you.
Me, I have some 1000 users (two or three largish mailing lists with
pretty decent traffic, about 100 pop3 or forwarding users on a P-III
with 128 mb RAM and an 8 gig hard disk)
