fstab will not work in this case.

ext3 filesystems can't change journalling mode with a simple remount. 
Default is data=ordered, as you know.

You need the rootflags option in grub, to stop it doing data=ordered.

Just add rootflags=data=writeback to your kernel line in menu.lst
