There is a very simple solution. If you have two public IP, configure the second 
server as the secondary MX.
If you have a single IP, allot a private IP to the second one and give a domain name 
and create dns entries for it in the first server. Configure first server to send a 
copy of the mails it receive to second server and use a script like expire-mail to 
remove mails older than 1-2 days from the second server. There is no need to buy big 
elephants that eat a lot of power and space.
