I looked at the ecos package. It does not do anything font related. It
merely dumps a bunch of files under /usr/src (and documentation under
/usr/share/doc/). It does not have a postinst script that will mess
with the system.
My next suspect was ecosconfig. It too does not seem to mess around
with fonts. It messes around with /usr/bin, /usr/lib and /usr/include.
The postinst script runs update-menu but I doubt that is the source of
your problem.
I very strongly suspect that
(a) ecos is not the source of the problem. Something else happened
around the same time you installed ecos that is causing the problem.
or
(b) The ecosconfig binary messes with fonts. This is less likely
because the ecosconfig is not setuid and therefore is not capable of
changing system-wide fonts.
