Bradley Willson made the good suggestion that I should install alacarte. That turns out to be a tool referred to (not by name) in some documentation on Red Hat's and Gnome's sites, but it wasn't actually part of the default RHEL 6 Desktop install (at least not from the "server" install DVD image), although it's on the image anyway.
