The menu is a function of the Window-Manager.
how you change what is on there depends upon what window-manager you
have. For fvwm, look in ~/.fvwmrc or ~/.fvwm2rc, for afterStep, try
~/.astep (I think), etc.
You should read the man pages for your windowmanager, if any.
Otherwise, look for files under /user/doc/<whatever WM>.
If all else fails, try "http://www.PLiG.org/xwinman".
There you will find links to the homepages of each (popular)
window manager. From that windowmanager's homepage, you should be able
to find configuration documentation.
