Hi Vince,
from my own mixed experience (vide supra in this list) in moving
everything to a new HDD, I can tell you this:
Your first question: get a drive as big as you can afford, and get it
from a store, so you can go back to them and exchange it if it isn't
working ;-(.
Your second and third question: I recommend that you install RH Linux
5.1 on your new drive from scratch. Then mount your old linux partitions
on dirs of the new system and copy those files that you need. This way,
you'll get a "clean" system as a bonus.
