Last time I did this was years ago, so I may be remembering it wrong ... but
the "true" default printer is a system property, not a user property. On the
other hand, a user can set an environment variable, PRINTER, to specify a
personal default. You'd do this with something like (in bash):

PRINTER="second_one" ; export PRINTER

either from the command line, or a script, or .profile, depending on whether
you want the change to be always in place for that user or changeable on the
fly.

"man lpr" and "man lpd" for more info.
