Thanks to all who got me straightened out on the definition of 'X'. I
didn't realize that all the gnome/kde/afterxyz's ran on X, I thought
they were unique programs and X was yet another.
I now have wine running. All but one I have tried so far work, so I'm
making progress.
I do not have a convenient way (yet) of starting individual programs
but Im sure I will figure that part out.

Maybe I didn't have to and maybe I did something wrong but the words
MANDRAKE_FLOPPY were not defined anywhere and that seemed to be my
problem. I modified the config file and replaced
MANDRAKE_FLOPPY with /mnt/floppy and similar changes for the rest and
WINE is now running.
I probably did it the hard way :)
