To avoid "loading" sendmail at boot, you just need to eliminate the rc* line
that starts it. Exactly where this line will be depends on your
distribution, but look in one of these places:
/etc/rc.d/rc* (Slackware)
/etc/rc2.d/rc* (Debian, assuming runlevel 2)
/sbin/rc2.d/rc* (I think Red Hat and its derivatives use this)
I can't help you with your Ethernet card question, but if you get one, you
can then load Linux onto the Toshiba via ftp or NFS. Which is better depends
on (a) which Linux distribution you want to use and (b) whether you need to
load directly from the Internet or have a Linux server with a CD drive
available to connect to. Or you can use one of the Linux distributions that
fits on a small number of floppies (e.g., Monkey Linux, Small Linux, even
Slackware's "A" series).
