The only way I know how to is fire up Gnome Control Center..
Choose Mime Types from the left column
Then choose each of the different graphics formats from the list
on the right, click the edit button, and a dialog box will popup
The should be some fields that look something like
eeyes %f
change each of these from eeyes to GQview ( or whatever the name of
the executable is ) and you should be good to go.
