Well, it depends. I don't really know how large a "big old ... Hitachi
Accuvue" monitor is in the more prosaic language of inches measured
diagonally, so I can only guess that your problem is simply having a dot
resolution that is inconveniently small for your screen size. If that is all
it is, then what you need to do, after you start X, is to use the keyboard
chord CTRL-ALT-+ to cycle through the screen resolutions available until you
get one that is to your liking.
That is only the first step, though. Whatever the screen resolution, the
underlying desktop will remain at 1280 * 1024, with the physical screen a
"window" into this larger virtual desktop. You may find you like the effect,
and if you do, stop here. If you don't, you need to change your X setting so
that the resolution you prefer is the largest one available,
I don't know how to to that in Xconfigurator, since I don't use it. If you
update your configuration using xf86config, you do it by removing the higher
resolutions from the list of choices available.
PS - I'm not sure how hard you looked for information on your monitor, but
it doesn't seem to be all that hard to find. I typed "Hitachi Accuvue" into
a search engine and got 70+ hits, the top 10 of which all were sites
offering specs of various Hitachi Accuvue monitors (there are different
ones, and I don't know which one you have). For example, if you have a
GX-20H, try this site:

Without knowing what monitor you have, I can't offer more specific advice
here, except to suggest that you try a bit harder to find the specs. Monitor
specs aren't a secret, at least not the specs for monitors that can connect
to normal PC video cards.

site listed above. This company describes its "Net Monitor Database" as
follows: "The Net Monitor Database has specifications and compatibility
information on over 2000 monitors. This is an indespensible tool if you are
having trouble connecting a display to your Mac or PC computer. There is
also a separate database of Monitor Manufacturers."
