I don't know Postfix, but hopefully I'll be able to at least point you
in somewhat the right direction.
Generally, it is the MTA that does envelope rewriting. I'm using
exim as my MTA here, but the general principle is that your MUA
drops an outgoing message into the outgoing queue. When the MTA grabs
the outgoing queue it goes through and rewrites each message header as
it sends that message on it's way.
For example, my machine name here is HAL9000 (yeah, I know - not very
original) and earthlink.net is my ISP. My user name on my machine is
mike, but as you can see by my email address my user name at earthlink
is reznaeous. It is exim that rewrites the envelope on the message as
it goes out of my system here to my ISP's server.
Take a look through the Postfix docs for a section labelled something
along the lines of Adress Rewriting (that's what exim calls it) or
something similar. Sorry that I can't be more specific, but as I've
never dealt with Postfix all I can do is give general pointers.
