Ryan,

I don't believe you can "install on a GPT" with CentOS/RHEL, though GPT is
supported. You will most likely have to create at least one virtual disk
that is under 2TB where you install the OS. You can then create a larger
(>2TB) virtual disk and use GPT on that to be mounted as a data partition.

For a typical server deployment, I find that the basic OS install of
CentOS/RHEL easily fits under 2GB. I usually recommend using 4-8GB Virtual
Disk for the OS. The rest of the space you can create a 2nd VD and use GPT
and your favorite file system to mount where you will have the majority of
your data.
