Hmm, I think it depends on how you have your file system partitions set up;

I have done this on a PE1950 running Windows 2k3. Everything for me was done
via OMSA: set 1 drive to offline > replace > set to online > rebuild (It did
this automatically for me as soon as I set it to online) > then repeat for
the other drive and (this is a pinnacle bit), expand you data partition to
fill the new storage space. As long as you have partitioned your RAID 1 into
two separate file systems for OS and DATA then you can expand your DATA
partition to fill our the extra space.

I haven't done this on any of our Linux servers yet but I assume you can
either use resize2fs or grow with LVM
