Same as anything else "pppd /dev/ttywhatever [baudrate]". You can 
set stuff like options, IP addresses from that (see man pppd). While its
normally wrapped by fancy GUI tools its not hard to use directly.

Last time I tried this 2.4 just blew up with PPP over USB serial, but
2.6 was looking better
