I'm not sure why people want to do this? Is it because you use different
accounts with different isp's, and when on isp A you want to use
smtp.a.co.nz and when on isp B you want to use smtp.b.co.nz, cos
otherwise you fail for relaying?

Why not use your localhost smtp server (sendmail, postfix etc). If you
do that you don't need your isp's smtp server to be involved at all,
unless you are sending to another user at that isp.

If you still want to use a smarthost to send your mail (ie your isp's
smtp server) you can control the smarthost that
sendmail/postfix/whatever sends to in your dialup script.
