I'm using netatalk at home to connect an iMac to a Linux Mandrake 8.1
box. It was pretty easy to set up, and the mac just detected the server
on the network and was able to map drives to the shared volumes.

Incidentally, my partner who also uses a Windows PC can use both the mac
(over netatalk), and the Windows PC (over Samba), to connect to the same
/home/ directory to share files and email across both systems (and she
can login on the Linux box and use email there too (Netscape/Mozilla).
