I assume you are looking for the groupware features of outlook/exchange
server, like shared contacts/calendars etc. Connecting outlook to an
imap server for *mail* is trivial afaik.

1. you can interface outlook to an imap server with insight connector,
http:/www.bynari.net (not free, only guaranteed to work on their insight
mail server, but they say it should work on cyrus, but they wil lnot
support it.) Good for situations with windows desktops who don't want to
shell out for exchange server. insight connector is an outlook plugin.

2. you can interface evolution to exchange server with some ximian gizmo,
which again costs money. good for shops with predominantly windows
servers and desktops, with the odd maverick who wants to run
linux/evolution and get along with the workmates. its here

3. there are numerous php/sql based systems which do a web based
groupware system, which means client platform is immaterial (or should
be, never let it be said that everything *will* run in every browser).
many people find these clunky compared to outlook/evolution.
