Damn straight - multiple monitors is fantastic.

I have a standard AGP nvidia card and a trident PCI in work machine:

0000:01:00.0 VGA compatible controller: nVidia Corporation NV11DDR [GeForce2
MX 100 DDR/200 DDR] (rev b2)

Dual monitors works fine, but because the trident is so old and slow I can't
run xinerama mode. I have a 19" CRT and a 15" CRT

At home I have two nvidia cards, based on exactly the same chip
0000:00:0c.0 VGA compatible controller: nVidia Corporation NV11DDR [GeForce2
MX 100 DDR/200 DDR] (rev b2)
0000:01:00.0 VGA compatible controller: nVidia Corporation NV11DDR [GeForce2
MX 100 DDR/200 DDR] (rev b2)

And xinerama mode works marvellously.  I have two 12" LCD on this box, and a
third LCD aside for when I find another card.

The easier way would be to get a dual head card.  Now, I've not had a lot to
do with these, but nvidia has to have something, as does ATI.  Which you
choose would be your preference.

As for monitors - if you can pop for two 19" LCD then you're a lucky guy.
Even two 17" LCD would be very nice.  Be sure that you're happy with the
resolution though - most 15" come made for 1024x768 and 17" for 1280x1024.
Other modes are done using stretching, or leaving a blank boarder around the
side.  

I'm envious :)
