The word "custard" comes readily to mind for last Wednesday's effort -
as close as I ever want to get to it, & thanks guys for not hurling that
term at me.

Agreed. So now I'm on the recalcitrant hardware, I've run some useful
tests.
There is a helpful range of installs in place.
Results, from the least useful 'upwards' (down / descending order):
WinXP - fine.
Gentoo 2004.?? - borked into a reboot loop.
SuSE 9.1 KDE 3.2 - same VGA480 mode fault.
SuSE 9.0 KDE 3.1.4 - had been mucking about previously, & gotten
projection right through a combination of SaX2, "Compaq Presario" screen
selection, & setting it to 1280x1024 max. This makes the desktop
stretched & needing scroll movement with touchpad to get about all of
it, but projection is good: "Signal - SXGA" = out of projector's range,
so it defaults to throw up 1024x768. Cutting down the SaX2 max setting
to 1024x768 shrinks projection to (VGA480?) fault tho. Xfree86 4.3.01
Fedora Core 2 - *best result*: Gnome, Generic LCD Panel 1024x768
detected. Laptop LCD & projection correct.
[Ubuntu 2004.10 - VGA480 output mode fault to be corrected]...
So, next step is to take David & Craig's pointer, & post the Fedora &
Ubuntu X-config files. The latter has some small tweaks written in from
Weds night - thanks Caleb Sawtell & Steve Holdaway (+ new guy whose name
I don't remember for the suggestions) - attached below.
My Dell has an ATI video card, which simply does not put out a signal under
linux. I've been meaning to look into the causes - but its been easier to
boot XP for those few times I needed a working VGA port.
ATI driver seems adequate for (some) VGA-output in all cases.
