Yes I know that there are different ways of doing it but I do not know which
is the best way.

That is, before the gib board goes on I can change my methods.

My current thinking was that the method I use at the moment (although the
cables would not lie across the floor) is tried and true - s-video to rca
for the video and sound card to rca for the audio. So I could rune the same
type of cables in the walls.

You can get so-called 'baluns' to send unbalanced signals like consumer 
AV signals over a balanced media like twisted pair wiring. Although I 
think they are designed more for security cameras so the quality may 
not be that great. Try Jaycar, Dick Smith, Global PC / Altronics and 
places like that.
