It went well.

The baluns were $40 per end IIRC.  (Of course, you need two of them)

It is composite video.

The baluns are video only, and I had to use some of the other pairs to get 
power to the camera.  You can get baluns that combine video, audio and 
power, or just video and audio.

You can also get "USB extenders" which allow you to run a USB device at the 
end of a nominal length of Cat 5.

You know, Cat 5 is cheap.  You don't need to worry about not using it up.
