well...
i use vi as my default editor so i get emails opened in vi all the time.

but if that is not the case for you, then the way would be to tell your
mail client to copy the email to a new folder, or save it to a file.
how that is done depends on your mail client.

in mutt it is as simple as hitting "C":
Copy to mailbox ('?' for list): <specify filename>
or hitting "Vs"
Save to file: <specify filename>

the first will get you the email with all headers, the second only the body.

in mozilla you may select file -> save as ... (or right mouse -> save as ...)
both getting you the mail with all headers.

once you saved the mail to a file, go and open it with vi.
