I'm not completely familiar with Auckland terrain, but have you tried
AIT, AUT or Manukau?
Usually, Polytechnics and Universities have Linux papers/courses - at
least as a part of their Diploma's and Degree's. That's the case at a
Christchurch Polytechnic anyway.

Greetings,
Well everyone will be greatly relieved to learn that my extended visa
has
been granted and that you will have my company for at least another 6
months.

In an effort to fill in some of my time usefully, I contacted Unitec
here in
Auckland to try and find a Linux course to do. Guess what? they sent me
a
list of courses on MCSE, MCNA, MXYZ etc. etc., Linux was not mentioned.
Does
it not exist according to the academic institutions? Does anyone know
if it
possible to get a Linux networking course or who to contact?

Cheers - Woodsey
