I'm not completely familiar with Auckland terrain, but have you tried AIT, AUT or Manukau? Usually, Polytechnics and Universities have Linux papers/courses - at least as a part of their Diploma's and Degree's. That's the case at a Christchurch Polytechnic anyway.
