The linux app "gtkpod" can sync the itunes database on ipods but
you should avoid iTunes as it is a "lock in" subscribe to licencing 
product by Apple that is quite restrictive.

Flash memory players are mounted as a scsi device in 2.4 kernels
and I think hard drive players use this method over the usb
connection as well.

I bought a no name brand with 15" lcd, 1 gig flash mem and fm transmitter
for $100 from trademe that works fine using Konqueror to drag mp3's over.

A lot of people fork out $350+ for an ipod in the belief that ipods
are a "quality" product made in the USA. Not so , apple ipods are
built in Shanghai in similar conditions to the many other plants in China 
making more than 800 models of mp3 players for export.
