I've been actually going through a similar process, trying out a Nokia
N95 (SymbianOS) to replace my Tungsten T3. With the Tungsten I was
synching with JPilot (using pilot-link) on Ubuntu HH - always worked flawlessly.

Cannot say the same for the Nokia N95! N95 has fantastic hardware, but the
synching isn't anywhere near as mature as pilot-link. Basically for
this combo you need to use the multisync/opensync tools synching with
evolution (which I don't personally like) or perhaps google calendar. So far 
have not managed a
successful synch, which is less that ideal.

I've actually decided to not synch the N95 with my Linux box, instead am
using Google Calendar & GooSync http://www.goosync.com/ (which I think if you 
pay for the premium service can synch gmail contacts).

Am thinking because of the excellence of pilot-link, other PDA/phone
synching won't ever be as good as a good old Palm!
