On Red Hat the easiest way to manage the services is with chkconfig. Try chkconfig --list | grep 5:on to see what's being run by default at runlevel 5 and turn off what you don't want with chkconfig --level 5 cannad off (or whatever service it's listed as). Use the opposite such as chkconfig --list | grep 5:off to see what's not being started automatically.
