For reliability and stability on O/S X you might have to install the commercial Tuxera <http://en.wikipedia.org/wiki/Tuxera> N.B. It's probably not possible to preserve fully all permissions, Alternate data streams, forks, and ACLs, etc., etc. across all platforms. Forget FATxx.
