You're asking for polar opposites.
Cellphones are inherently closed, mostly due to FCC-style regulations.
A cellphone has to be tested to conform to "does not transmit above
certain levels" etc.

Basically find a cell phone with a data connection and a working SSH
client, and be happy.
iphones are very pretty but they're the ultimate closed environment.
However the apps all work together properly.
android is more wild-west, where apps may or may not do what you want.
Neither platform is totally trustworthy.
Personally, I have a work iphone and an old nokia 6310 for non-work
use. They're tools, not an end-purpose. Just my 2c.
