Ok, I know I know I reply to myself but it might helps someone :) I kept looking for an answer and I found one:

Then, I started luvcview with my second webcam, which use MJPG:640:480:30fps and it worked. So, as Laurent says in the link, it exceeds the bandwidth. I'll try to change my mencoder command to make it use MJPG (if someone know let me know).
