I'm not sure about this one--however, I would think that it would be
somewhere else, rather than grub. That is, usually, to have Linux boot
into text mode, rather than an X session, you would edit /etc/inittab.
There, you would set the default run level to a different level to get
text mode.
In this case, I would guess (I don't have a Knoppix or similar CD
around) that some other file is what's making it boot into KDE. That
is, grub is simply going to inittab, which goes to an rc level script
(those things in /etc/rc.d) which is what is booting KDE.
Hopefully, someone wiht more knowledge of Knoppix can help here.
However, doesn't the KDE login usually give you a choice of session, so
that you can choose another Window manager?

This is always a tradeoff between resources and functionality and, even
more importantly, what you are used to using. I like fluxbox which is
much lighter than KDE, but still a little heavier than some others. In
my case, I want to run a few gui apps, such as a browser, which I can
do with fluxbox key shortcuts, and run some xterms. Other people
appreciate that KDE or Gnome will do many things for them, such as
configure printers, have their own mail client, etc.
The lightest weight ones are probably things like weewm, evilwm and of
course, twm. Most of these will give you various xterms, from which you
can type your commands.
I like fluxbox because it is still pretty light on resources, but still
gives me a bit of eye candy if I want it.
