You shouldn't have to recompile your current distro's kernel to try a
live CD. Maybe if you could point us to the instructions you're looking
at, someone could be of more help. You would, when its booting, hit e as
in edit, which will enable you to find a line in the live CD's boot menu
that begins with kernel. At the end of that line you would add
acpi=off
(no quotation marks).
To answer your question, if you recompile a kernel then the machine
probably won't boot. However, one should always savet their old kernel,
rename it to vmlinuz.old or something similar. The same with the
initrd.gz or initrd.img.
Then, before rebooting, add an entry to your grub menu.lst for the old
kernel.

Yes, what you do in a VM won't affect the host system.
