Not always.  It's easy to change the default messages that your smtp
server sends out.  In that case, you cannot rely on the information from
smtp servers, but in general, yes, smtp is good for identifying platforms.

and as far as using smtp straight, that's how I send mail from home
everyday, almost every mail. Especially those anonymous mails from servers
that allow mail relay.
