AFAIK,
sudo chmod u+/-wrx -R /media/windows
should do it.
u stands for user
w stands for write
r stands for read
x stands for execute
+ give
- take
-R recursive
eg. sudo chmod u+r -R /media/windows
to make all file in windows folder writeable by the user.
