I don't think so. Rather you're opening up a potential security
hole by running an extra service.

Not at all. And there are other alternative name servers too like

If you don't know, then usually you aren't running one.
Anyways bind runs on port 53. So, you can check that port.

This goes in /etc/resolv.conf I believe. This happens
automatically once you have edited the prepend line
in /etc/dhcp/dhclient.conf.
